Noodles

Lemongrass beef on noodles
Beef marinated with lemon grass, oyster and fish sauce, then cooked with red onion,garlic. Tossed with fresh rice noodles, a lovely Vietnamese dish

Grilled fish with fresh rice noodles
Fish marinated in plain yoghurt, fresh pulverised galangal, turmeric, palm sugar and lime juice, then cooked. Sprinkled with fresh herbs

Noodles with Thai flavour
I use bean curd or thin egg noodles for this dish with sliced barbecued pork and/or chicken, and/or prawns, spring onions, slices of omelette
OR Vegetables only such as shitake mushrooms, fine strips of beans, celery, carrot, and capsicum. Diced tofu (optional)

Chinese sesame noodles with eggplant
A combination or sweet and soya and nutty all at once. Soft egg noodles or fresh rice noodles, eggplant and finely sliced shallots. Marinade of sesame and olive oils, light soya sauce, red wine vinegar, a little chilli (optional)

Spiced snapper or orange roughy when in season
With lemon grass and coconut with rice noodles. Coconut milk heated with a little ginger, chilli, kaffir lime leaves, chopped lemon grass, fish stock and lime juice—strained and re-heated to serve with the fish and fresh noodles.

Crunchy vegetable & chicken noodle dish  
Rice vermicilli, chicken, carrot, red capsicum,mushrooms,tomato, lime juice and mint leaves. This can served as a fork dish
OR wrapped in small cos or iceberg lettuce leaves. Wombok [Chinese cabbage] another option
